Cold Street Corn Casserole
This is my twist on “Views on the Road's” Street Corn Casserole
Ingredients:
4 cups frozen corn (or fresh corn off the cob)
1 cup mayonnaise
1/2 cup crumbled cotija cheese
1/2 cup chopped bell pepper
1/4 cup chopped jalapeno
1/4 cup chopped fresh cilantro (plus extra for garnish)
2 tablespoons butter
1 teaspoon tajin
Salt and pepper to taste
Instructions:
Mix Ingredients: In a large mixing bowl, combine the ingredients (Not the garnish). Stir until everything is well mixed.
Add Toppings: Sprinkle the crushed tortilla chips evenly over the top of the casserole (Add Hot Sauce if you like).
Serve: Refrigerate for two hours before you serve. Garnish with additional chopped cilantro if desired.
