Cold Street Corn Casserole

This is my twist on “Views on the Road's” Street Corn Casserole

Ingredients:

  • 4 cups frozen corn (or fresh corn off the cob)

  • 1 cup mayonnaise

  • 1/2 cup crumbled cotija cheese

  • 1/2 cup chopped bell pepper

  • 1/4 cup chopped jalapeno

  • 1/4 cup chopped fresh cilantro (plus extra for garnish)

  • 2 tablespoons butter

  • 1 teaspoon tajin

  • Salt and pepper to taste

Instructions:

  1. Mix Ingredients: In a large mixing bowl, combine the ingredients (Not the garnish). Stir until everything is well mixed.

  2. Add Toppings: Sprinkle the crushed tortilla chips evenly over the top of the casserole (Add Hot Sauce if you like).

  3. Serve: Refrigerate for two hours before you serve. Garnish with additional chopped cilantro if desired.
