Cooking a Large Tomahawk Steak to Medium Rare

Hopefully y’all will be more comfortable working with large cuts of meat after watching the video and following the directions below. Make sure you have a instant read thermometer. It is a game changer in the kitchen.

Ingredients:

  • 1 large tomahawk steak (2-3 inches thick)

  • Salt

  • Freshly ground black pepper

  • Olive oil or your preferred cooking oil

  • Fresh herbs (optional: rosemary, thyme)

  • Garlic cloves (optional)

Instructions:

  1. Preparation:

    • Remove the tomahawk steak from the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps it cook more evenly.

  2. Seasoning:

    • Generously season both sides of the steak with salt and freshly ground black pepper. If using, you can also add crushed garlic and herbs for extra flavor.

  3. Preheat the Grill or Oven:

    • Grill Method: Preheat your grill to high heat (around 450-500°F).

    • Oven Method: Preheat your oven to 350°F. Use a heavy skillet, preferably cast iron, for the initial sear.

  4. Sear the Steak:

    • If using a grill, place the steak directly over high heat. Sear each side for about 2-3 minutes to develop a nice crust. Don’t forget about the skinny sides. Go all the way around to seal in the juices

    • For the oven method, heat the cast iron skillet on the stovetop over high heat with a little olive oil. Once the oil is shimmering, add the steak and sear each side for 3-4 minutes.

  5. Indirect Cooking:

    • Grill Method: Move the steak to a cooler part of the grill and close the lid. Cook for an additional 15-20 minutes, flipping halfway through.

    • Oven Method: Transfer the skillet with the steak to the preheated oven and cook for about 15-20 minutes.

  6. Check Internal Temperature:

    • Use an instant-read thermometer to check for doneness. For medium rare, the internal temperature should be between 130°F and 135°F.

  7. Rest the Steak:

    • Once the steak almost reaches the desired temperature, remove it from the heat. Tent it loosely with aluminum foil and let it rest for 10-15 minutes. This allows the juices to redistribute.

  8. Slice and Serve:

    • Use a sharp knife to slice the steak against the grain to enjoy maximum tenderness. Serve with your favorite sides.
